Breaded Chicken Parmesan

So I found this AWESOME recipe on SparkPeople.com.  It was so quick and simple and turned out so amazingly!  Instead of bread crumbs, I used crushed up croutons that we had in the pantry that were Parmesan and Garlic and it made it so good!  I also shed some marble cheese and sprinkled it onto the top as well.  I can't wait to make this again for Stephen one of these nights.  I also made it with Chicken & Wild Rice by Uncle Bens along with some corn... but any kind of side would would really well!


Introduction

The same great taste of the Italian favorite, but this one only has five grams of fat! (probably a little more with the cheese sprinkled on top)
Number of Servings: 2

Ingredients

    12 ounces white meat chicken (one double breast)
    1 tbsp grated Parmesan cheese
    1/4 cup Italian-style bread crumbs 
    1 tsp garlic powder 
    1 tbsp onions, dried
    Crushed red peppers if desired
    1 -2 tbsp olive oil

Directions

Cut the chicken breast horizontally (filet it) so you will end up with two thin pieces.
Rub each piece with olive oil.
Mix dry ingredients together and pat each piece with the crumb mixture until well covered.
Bake at 375*F for about 20 minutes.
